This carving knife has a much more flowing profile than the classic version. The 19.5 cm blade rises gently toward the tip, giving it a slightly more dynamic shape while still remaining unmistakably a European kitchen knife.
At only 2 mm thick, the blade is light and very flexible. It works particularly well for long slicing cuts through cooked meat, roasts and similar foods, where the narrow blade moves easily through the cut without feeling heavy or cumbersome.
Like the other knives in this small series, I started with an existing stainless steel blade and reshaped and refinished it before fitting a new olive wood handle. The exact alloy is unknown and the steel is not particularly hard; it is a tough, forgiving stainless cutlery steel with a noticeably flexible character.
The integral full-tang construction is retained from the original knife, while the belt grinder finish and new handle make the finished piece distinctly my own. It remains intentionally transparent as an MFN rework rather than a completely new forged knife.
