Nakiri Vegetable Knife
This Nakiri Vegetable Knife is a precise and versatile tool. Its extremely thin 2 mm carbon steel blade glides effortlessly through vegetables of all kinds, and is strong enough to handle meat as well. The steel is hardened to 59–60 HRC, making it sharp, easy to maintain, and slightly more resistant to rust than typical carbon steel.
The handle is made from beautifully grained Umbrian olive wood, shaped in my signature ergonomic form, combining European comfort with subtle Japanese elegance. Olive wood is prized for its durability, warm feel, and natural patterns, giving the knife a unique character that grows more beautiful with use.
This Nakiri turns everyday cooking into a small ritual: each slice, chop, and dice becomes a moment of connection between hand, blade, and ingredients.

Knife Care
Always wash by hand with mild soap and water and dry immediately. Avoid the dishwasher, as heat and detergents can damage both steel and wood. Occasionally apply a light coat of food-safe oil to maintain both the carbon steel blade and the olive wood handle. With proper care, this Nakiri will remain a reliable and beautiful companion for years to come.
