This knife is a compact Nakiri designed for precise vegetable preparation. The straight edge and tall blade profile typical of the Nakiri style allow clean push cuts and controlled chopping on the board.

The blade is made from 440A stainless steel and hardened to approximately 57 HRC. This steel is known for its strong corrosion resistance, good toughness, and easy resharpening, making it well suited for daily kitchen use with minimal maintenance.

The edge geometry is optimized for this steel. The blade is ground to a thin edge thickness of approximately 0.25–0.30 mm before sharpening and finished at an angle of about 17° per side, providing a balance of cutting performance and durability appropriate for 440A.

The handle is made from Umbrian olive wood, a dense and stable hardwood that offers a comfortable grip and natural resistance to moisture.
