This Bunka knife is forged from 48 layers of damascus steel, made from 15N20 and recycled saw blades. The result is a tough, fine-grained blade with a balanced mix of edge stability and resilience. Heat treated to approximately 59–60 HRC, the blade offers reliable sharpness for everyday kitchen work.
The Bunka originates from Japan and is designed as a versatile all-purpose kitchen knife. Its wide blade and straight cutting edge make it suitable for vegetables, meat, and fish, while the pointed tip allows for precise detail work.
With a blade length of 16 cm plus a 2 cm ricasso, a width of 4.5 cm, and a thickness of 3 mm, this Bunka is thinner than many traditional examples. The blade is ground close to zero for efficient cutting and finished with a hand-sanded surface.
The handle measures 12 cm and combines brass, horn, and maple wood, creating a balanced grip and durable construction.
