Kirizuke Kitchen Knife Set

This kitchen knife set consists of four blades in a unified Kiritsuke-style design: an Office/Petty knife, a Bunka, a Yanagiba with double bevel, and a Kiritsuke. 9 Layer Copper Damascus Kirizuke

This Kiritsuke knife is forged from copper damascus with a layered construction built around a leaf spring steel core. On each side of the core, the blade is layered with copper, saw blade steel, copper, and mild steel, resulting in a total of nine layers. Sanmai Damascus Petty / Amboyna Handle

This Petty knife is forged from an experimental damascus san-mai construction. The damascus cladding is made from so-called stacked C elements, processed in a mosaic-style pattern. Due to the experimental nature of this forging method, the damascus pattern is not perfectly uniform and shows minor visual imperfections. These do not affect the structural integrity or cutting performance of the blade but are the reason this knife is offered at a reduced price of 150 €. A fully uniform execution of this damascus would normally place the knife in a significantly higher price range.

The core steel is K720, hardened to approximately 60–61 HRC, providing stable edge retention and good toughness for daily kitchen use. K720 is a high-carbon tool steel with fine grain structure, well suited for thin kitchen geometries and precise cutting tasks.

120 layer Twist Damascus Yanagiba

This handcrafted Yanagiba brings traditional Japanese slicing performance together with the expressive depth of twist-forged damascus steel. The blade is forged from 120 alternating layers of K720 and 15N20, tightly twisted to create a flowing, dynamic pattern along the entire length. This lamination pairs contrast with strength: 15N20 adds toughness and shine, while K720 provides the core edge stability needed for clean, effortless cuts.

Heat-treated to around 60–61 HRC, the double-bevel geometry delivers a razor-sharp, durable edge suited for sashimi, precise portioning, and long, silky slicing strokes. The taper from 3 mm at the spine down to 1.5 mm toward the tip gives the blade a refined agility and balanced cutting feel.
