### European Utility Knife – Olive
A small, light European kitchen knife for the jobs where a full-size chef’s knife simply gets in the way. The narrow 10 cm blade is only 1.5 mm thick and noticeably flexible, making it especially comfortable for small vegetables, fruit, trimming and precise work directly in the hand.
This knife started with an existing stainless steel blade, which I reshaped, refinished and fitted with a new olive wood handle. The exact steel grade is unknown; it is a relatively soft, tough stainless steel rather than a high-hardness modern cutlery steel. For a knife like this, I actually like that character: thin, forgiving and easy to maintain.
The integral full-tang construction gives the knife a very traditional European feel, while the simple belt finish keeps it deliberately straightforward. This is not one of my fully forged knives, but an honest MFN rework of a good existing blade.
